When employers ask for a writing sample, what should I send?

I'm applying for internships and some organizations ask for writing samples, can I send my old essays? Or maybe write a newspaper article and send them that?

Most of my internships are in administrative support in health related fields...researching, updating, editing, writing reports etc...

I would send a small treatise on some subject that you are particularly good at writing about. For example, Fly Fishing, or tie-dying t shirts.
